Mint Brownies

Hey everyone!

In celebration of spring, I will do a recipe post. And what does that have to do with spring, do you ask? Uh… nothing really. Hehe. 😛 Continue reading “Mint Brownies”

Snow Cream!!!!

Yup! That’s right, we made snow cream.   It’s still snowing, it is supposed to have up to 10 inches of snow.

I wanted to make snow cream quick before supper so Logan and I went up to our family room roof (you can climb out of my bedroom’s window onto the roof) and got the snow.  You need to make sure that it is very clean, and powdered snow works best.  Here is the recipe:

1 cup of milk
                           3/4 cup of sugar
1/4 tsp. of salt
1 1/2 to 2 tsp. of vanilla
Mix these ingredients in a small bowl until the sugar dissolves.

2 qts. of fresh, clean snow
Mix the snow with the “sauce” and eat quickly.  Enjoy!!

Here are the pictures,

Raspberry Chocolate Bars

Allison, my cousin Leisha, and I made up this recipe.  It works best with fresh raspberries but frozen  ones work  fine.  We have a big black raspberry patch and we have picked 3 gallons in 2 pickings.  The first time we made smoothies. Next we made ice cream and bars. Here’s the recipe.

I hope you like it! We did!

Homemade Chocolate- Covered Mints 🍬

We made these mints in about an hour, but the hardest thing was covering them with chocolate. The rest was easy.

Here is the recipe

Homemade Chocolate Covered Mints

  • 1/3 cup light corn syrup
  • 5 Tbs butter, softened
  • 1 1/2 tsp mint extract
  • 1/2 tsp salt
  • green food coloring (start with a couple drops and add more until desired color is achieved)
  • 4-5 cups powdered sugar
  • 10 oz chocolate candy coating

  1. Combine corn syrup, butter, extract, salt, and food coloring in a medium size bowl. Stir until well combined.
  2. Stir in 1 cup of powdered sugar at a time until mixture is too stiff to stir.
  3. Add more powdered sugar and knead mixture until it no longer sticks to your hands, adding more powdered sugar as necessary. (LOTS of powdered sugar right!)
  4. Roll into 1-inch balls and place on trays or baking sheets lined with waxed paper.
  5. Flatten with a flat-bottomed cup or your hand. (Or you can roll them out the right thickness with a rolling pin and then cut them out)
  6. Melt chocolate candy coating according to package directions.
  7. Dip the candies into the melted chocolate with a fork, tap off the extra, and place back on the waxed paper.
  8. Repeat until all candies have been coated.
  9. Let candies set up until chocolate is firm before storing in an airtight container.

Happy eating😉!
